SW Summer Fruits Ice Cream

2 servings down before I thought to photograph them!

Bowlful of frozen summer fruits (defrost in fridge overnight)

Muller Light vanilla or vanilla with chocolate sprinkles

Approx 300g Quark/Natural Yoghurt (or a mixture of both!)

Sweetener to taste ( added 1tbsp Stevia)

1 meringue nest (dried version)

 

5 servings of two blocks at 1/2 syn each*

*technically the fruit is being manipulated so you could add more syns here (around 1 syn per serving, meaning 1 block is 1/2 syn)

 

Blitz the fruit in the blender, then add the quark/natural yoghurt and muller light. Taste the mixture and add sweetener to taste.

Pour the mixture into moulds or a tray so that the complete mix can be split into 5 or 10 portions.

Crumble the meringue nest on top of the mixture.

Freeze, then cut into sections.

 

The ‘ice cream’ is quite solid, so either defrost for a short period before eating or eat like an ice lolly!
